Ingredients

Meatballs

  • 1 pack Frood Swedish Meatball Blend
  • 150ml milk
  • 1 egg
  • 500g mince
  • Olive oil or butter, for frying

Rödbetssallad (beetroot salad)

  • 250g pickled beetroot, finely diced
  • 3 tbsp mayonnaise or crème fraîche

To serve

  • 4 large slices sourdough
  • Olive oil, for toasting
  • Mixed salad leaves (rocket, spinach, red chard)
  • Fresh dill

Preparation Method

  1. Step 1

Mix the Frood Swedish Meatball Blend and milk in a bowl. Leave to rest for 5 to 6 minutes.

  2. Step 2

Add the egg and chicken mince and mix well.

  3. Step 3

With damp hands, shape into meatballs. Put them to the side.

  4. Step 4

Heat a little oil in a frying pan and toast the sourdough on both sides until golden. Set aside.

  5. Step 5

Add a little more oil or butter to the pan and fry the meatballs over a medium heat, turning, for 8 to 10 minutes* until browned and cooked through.

  6. Step 6

Stir the diced beetroot through the mayonnaise or crème fraîche until bright pink.

  7. Step 7

Top each slice of toast with salad leaves, a generous spoonful of beetroot salad and the warm meatballs. Finish with sprigs of dill.
